Today will only be a half day of food posting! The second half of my eating-- the evening NYE party and such, will have to wait till tomorrow after my Polar Dash 10K race!!
I have all my clothes laid out for the race! It isn't till 11am, but I want to make sure I am all ready! Smart Wool socks, Montrail shoes, 2 pair pants (it's supposed to be 5 degrees!) my champion running pants and my Lucy cardio pants. Smart Wool undershirt, Nike Dry fit, Denali jacket in MINT green-Yum! Aveda chap stick, Ipod, Creepy face mask and new pink Burton hat!
I ran errands this morning, finding everything I needed and getting a lot done in a short amount of time! So, becuase of that I treated myself to a quick breakfast from the Wedge, my local co-op. Butter croisant & coffee!
I also had a half a banana with almond butter and some Blueberry POM.
Lunch was leftovers! Chicken, sweet potato, sundried tomato wrap with lettuce and dijon and
Anne's Tomato bisque!
Snacks were California Cuties that I toted around with me!

Sorry Mr. Churchill, I prefer this definition:
1 packed cup grated raw carrots (1-2 medium sized carrots)
1/4 cup water
1/2 cup canola oil
2 cups coconut flakes
3/4 cup rice flour
1/2 tsp salt
1 tsp alcohol-free vanilla extract
2 tbs agave nectar
optional garnish: 1 handful semisweet chocolate chips, melted.
(Christine used Tropical Source brand which are vegan and gluten-free.)
Preheat the oven to 350 degrees.
Mix all the ingredients together except for the chocolate in a large bowl.
Lightly grease a cookie sheet.
Wash your hands and pat the mixture into 24 balls, slightly smaller than golfballs.
Place balls on pan 2 inches apart and bake for 30 minutes, rotating once. Use a spatula to remove the macaroons from the pan.
If desired, drizzle melted chocolate over the macaroons with a fork.
NOTE: If you think you KNOW how to melt chocolate chips, but aren't certain, look that up first. I thought "how hard can it be?" I started in a pan on the stove and it looked great, but they hardened right up so I promptly burnt them to a crisp in the microwave. Sigh.
As I stood there in the kitchen, nibbling on the hard, chewy, burnt chips (thinking they tasted like when you set a marshmallow on fire) I knew that I couldn't post the final product and gloss over this fiasco.
So 1) Yes, I ate some of this gunk and B) I am sticking to brutally honest blogging! After all, this wasn't a failure, it was a learning experience!
Chocolate for drizzling, take TWO!
This time, with a bit of research, I found that a no mess way to melt and drizzle chocolate chips is to place them in a ziploc bag, dipping that in hot water, and sniping a hole in the corner.
I cut a larger hole than I needed, so the chocolate is really thick, but this is a WONDERFUL trick, next time I will snip smaller!

I am so pleased with my roasted Chicken! Wee!
I sprinkled it with parsley and rosemary with a little evoo.
For my sides I roasted sweet potatoes and purple potatoes with pink grapefruit juice and curry, lightly sprayed with evoo also. Steamed spinach and...you guessed it...cheese!
I get too hungry for dinner at 8!

It hasn't been too cold running outside lately. I feel prepared for the race and am not expecting a PR, but am aiming for a 9 min mile pace. The race day is supposed to be 5 degrees Fahrenheit, so I may break out the face mask.
I wear lipstick when I go running because it makes me feel a little more sane and of course, faster.

I had a bit of a late start this morning so lunch is easy, I threw together mini pizza's on whole wheat english muffins-I thought I had pitas-Doh! I sprayed the muffin with olive oil and topped it with yellow squash and green peppers, with a dash of cardamom-ZING! They were almost over done! I had a half grape fruit on the side.
And a bunch of Hershey kisses wrappers appeared on the kitchen counter, was it the cats? Hmm...doubt it, I munched on them a bit too mindlessly while working this afternoon.
At least they are small and will ALL go with me to the NYE party tomorrow. I swear, if it's a sweet and it's in my house, I have little control!
I treated myself to a Starbucks coffee and Kind bar, the Cranberry & Almond--SO good.
Dinner tonight will be a roasted chicken with mushrooms and sweet potatoes! I like to make big meals sometimes so I can have left overs and eat it through the week. I have some grand plans for my left over chick! My day has been a bit off schedule so it will be a late dinner. I will post juicy pics late tonight! Yay for Day 3 of food blogging! I am learning a lot about how I eat!

I admire food bloggers.
Not only are you camera ready at EVERY moment, reveal to us your every bite, but it takes a lot of TIME to blog like that!! I am enjoying it so far, but must tip my hat to those who do it all the time.
Did I mention that I love eggs? Today I had some poached eggs with spinach and cheese on a whole wheat english muffin, salsa on the side. This is a great protein breakfast and it's a good thing, I have a full day ahead of me!
Morning snack was Almond nut crackers with cheese and salsa and more cuties from California! I tend to use salsa often, I love all the flavors and how different salsas can add a different feel to your meal.
I have been thinking about preparation. Maybe it's the coming new year, projects I am working on at my place & the focus on food this week. When I make healthy food at home it requires preparation: planning a menu, buying groceries, chopping, sauteing etc.
There are areas in my life where I want to improve and advance, to make changes! I talked about a few in my Goals and Lessons post. I had to prepare for changes! I had to find out what I needed to do & gather supplies for it--be it courage, money, education etc. Then do the work, take the lessons, scrimp and save, weigh the options, wait and prepare.
Are you doing this too? After preparation, we get to step out in faith and take hold of our dreams & savor them, like the meals we prepare and enjoy! Our life stuff takes a little longer to prepare for than a good meal does, but when we are working toward our dreams the preparation will be well worth it.
Lunch was a great big steak salad! I top spinach with the steak, avacado, sun dried tomatoes and a bit of mozzarella, sesame seeds and Macy's toasted sesame dressing and it is divine!
Dad brought me a huge box of kisses. I am bringing most with me to my New Years Eve party on Thursday, but enjoyed these three today!
Super was a simple but WONDERFUL meal! I ran 4.5 COLD miles and wanted warm comfort food, so I went local and organic with tomato soup and grilled cheese!
I added purple rosemary roasted potatoes as a side and could only eat half of everything! My eyes are bigger than my stomach, often.

One of the highlights of my Christmas weekend was seeing 2 of my 5 nieces: Mandy and Marissa! They are both beautiful girls who make family time so much fun. Mandy is so easy to talk with and so wise for her 18 years and Rissy just got a new kitty, so we played with her!
Day one of food blogging was interesting, but I think I succeeded not only at eating well, but snapping pics of it all!
A real staple breakfast was Oatmeal, half a banana, cinnamon and some Raw Blue Agave nectar, a natural sweetener which I tried for the first time today. Oh, and coffee!!
Morning snack was a hard boiled egg with salsa and a California Mandarin!
One egg contains 5.5 grams of protein (11.1% of the daily value for protein) and only 68 calories! I think they are the perfect snack because they are small, portable and protein packed--they keep me filled up!
Lunch is one of my FAVE meals: avocado sandwich. You can put ANYTHING on these! Today I used Laughing cow cheese, Spinach, mushrooms & italian seasoning. Some mixed veggies with cheese on the side!
I had some grand plans today, but they fell through when I came across a folder of some clippings I was going to use for a vision board. As I looked through them, I noticed how many were about travel & new experiences! This was something that came out in the last board as well and it resonates with me now more than ever.
So, I pampered myself with a little fun and a mental break before moving on to my goals and accomplishments for the day! I gave myself permission to use my afternoon & compile this board. It was centering and energizing to look at all the things I am dreaming of and striving for!
After this I ran about 2.5 miles quick before Dad came to get me and we took off to Pearson's Edina Restaurant for a little post-Christmas Dinner! It was fun and a PERFECT time to try my hand at food blogging!
Eating at Pearsons is not just dinner, it's an experience: a Lutefisk experience!!
I have been wanting to eat this for at least 3 years and Dad and I decided to splurge and go for our Christmas together!
I made sure to order some color on my plate to contrast the white fish, so I had red potatoes and squash. The squash was PERFECTION as was the fish.
SO good. So jiggly.
Salad and bread made an appearance too! I got the dressing on the side so I could watch how much I used. I was a little less cautious with the butter. :)
We came home and visited for a while, had some coffee and exchanged gifts.
I had a bit of fruit cake too--thanks Dad!
Fitzy hung out with us for a while too, it was a good day and a great night.
