Wednesday Recipe: Filling Chili

It's been a while since I have posted a recipe so I thought I would share one that I made today for a potluck at work. It is my FAVORITE fall food to have: Chili!! I make this particular recipe through the whole winter because it makes so much and is really low in fat and high in fiber!! For those of you counting Weight Watcher points--it's 2 points per 1 cup serving!!

Ingredients:

2 Medium jalapeno Peppers, chopped
3 cloves of garlic, chopped
1 1/2 T. of chili powder or to taste
1/2 T. cayenne pepper (optional-Hott!)
1 Medium Onion Chopped
1 lb. cooked lean ground turkey
28 oz. Canned stewed tomatoes
10 oz. Can, tomatoes with green chilies
15 Oz. can pinto beans
15 oz. can black beans
1 lb. Dole classic cole slaw
48 oz. V8 low sodium Vegetable Juice (I do not use all of this--usually only 30oz or so)

20 servings
Serving size 1 Cup
2 WW pts/ serving
Chop all the veggies and brown the meat (or go without!!). Combine with beans, slaw and tomatoes in a large pot or crockpot, sir in spices a on high for 50 min stirring constantly or cook 4-6 hours in the crock pot on high, or 8 hours on low.

Serve with your favorite toppings!! I like cheese, cottage cheese, laughing cow... do you see a pattern? Onions and sour cream too!

Target Health and Fitness Expo Recap Part 2

Sorry that I am so behind that I didn't get the second half of my Target Health and Fitness Expo recap till now!!

St. Paul's Rivercentre packed with marathoners and spectators!

Since the expo and the first post I have put in 2 more long runs in preparation for my half marathon! (it's all I'm talking about, can you stand it?) and am really excited, because I got to wear my new Road ID that came in the mail!

As a single girl who is often running alone and as the year goes on, in the dark more and more, it is vital that I have ID on me at all times, just in case something happens. Granted, I do take other saftey measures (I always carry my phone and always run where there are street lights) but this is a great precaution in case anything were to happen.

At the expo, I was pulled into a booth for Yurbuds, a little attachment for your earbuds/ipods. I wasn't really interested in them, for me having my ipod is cut and dried. I need music on my runs and i've got it! But the guys at Yurbuds quickly showed me differently. Here's how they work:

They measured my ear, determined my size and had me try them on. Wow, no shifting buds, no falling out, no outside noise. They were great, but I had to inform the booth that I had just recently had my buds poop out on me anyway but thanks! Thankfully, the friend I was with pounced in and mentioned my blog and the gracious guys at yurbuds GAVE me a pair in my size and a new set of earbuds to go with them:

Ready to run with the Yurbuds!! I like them, the first time I used them, they seemed a bit muffled but after going to their website and double checking how to put them in, I think it was operator error!! They stay in great and I have used them 3 times now...

If you would like to try them, they gave me a code for FREE SHIPPING! Just visit www.yurbuds.com, determine your size and enter this code: ME909 good for free shipping for the next 30 days!!

Finally -- I WON a weeks worth of these really cool strips from Enlyten!
The one's I got chose to try are for energy and one cassette to replenish electrolytes! They also sell them with melatonin, antioxidants and for race recovery --plus a few others.

I used a few of the energy strips (3 per serving) before working out this weekend and I could really tell a difference, they were mint flavored and gave me a great little boost without filling my stomach! Tomorrow, I will be posting an Enlyten GIVEAWAY!! Watch for it and if you've read this far...you have a heads up!
