It's been a while since I have posted a recipe so I thought I would share one that I made today for a potluck at work. It is my FAVORITE fall food to have: Chili!! I make this particular recipe through the whole winter because it makes so much and is really low in fat and high in fiber!! For those of you counting Weight Watcher points--it's 2 points per 1 cup serving!!
2 Medium jalapeno Peppers, chopped
3 cloves of garlic, chopped
1 1/2 T. of chili powder or to taste
1/2 T. cayenne pepper (optional-Hott!)
1 Medium Onion Chopped
1 lb. cooked lean ground turkey
28 oz. Canned stewed tomatoes
10 oz. Can, tomatoes with green chilies
15 Oz. can pinto beans
15 oz. can black beans
1 lb. Dole classic cole slaw
48 oz. V8 low sodium Vegetable Juice (I do not use all of this--usually only 30oz or so)
Serving size 1 Cup
2 WW pts/ serving
Chop all the veggies and brown the meat (or go without!!). Combine with beans, slaw and tomatoes in a large pot or crockpot, sir in spices a on high for 50 min stirring constantly or cook 4-6 hours in the crock pot on high, or 8 hours on low.
Serve with your favorite toppings!! I like cheese, cottage cheese, laughing cow... do you see a pattern? Onions and sour cream too!

Since the expo and the first post I have put in 2 more long runs in preparation for my half marathon! (it's all I'm talking about, can you stand it?) and am really excited, because I got to wear my new Road ID that came in the mail!
As a single girl who is often running alone and as the year goes on, in the dark more and more, it is vital that I have ID on me at all times, just in case something happens. Granted, I do take other saftey measures (I always carry my phone and always run where there are street lights) but this is a great precaution in case anything were to happen.
