Food blogger Day 7: Win-win


Today is officially my last day being a food blogger! I started today with a breakfast I have had in my head forever and it is very simple:

Quinoa with steamed spinach, southwest spice and cheese!
SUPER YUMMY and filling.

I had a small glass of Lifeway Cappuccino kefir also.
Not only does it taste fantastic but it is low-fat and has 10 active cultures in it
so it aids in digestion and immunity!


Lunch was some chicken soup that I made last night. I used the leftovers of my roasted Chicken (there is still a lot left! I am sure I will have chicken something for supper!).
I started with chicken broth and just added my ingredients to that.

I have never made my own chicken soup from scratch, but will probably tackle that yet this year. I do love soup. :) I added celery, carrots and nearly a whole onion to the broth!

Then I shredded big chunks of the roasted chicken into it and let it simmer for 20 minutes. Even though the chicken was seasoned, I tossed in 1/2 Tsp of bay leaves and parsley. I also added a dash of sea salt.

I added three handful of egg noodles as the last addition and let it simmer on low for another 8-10 minutes or until the noodles were done and then removed from the heat. It is excellent, especially after sitting overnight in the fridge!


I love stews, soups and chili with HUGE chunks of things in them! Some friends and family hate the way I chop because the pieces are so big!


My afternoon snack was cayenne pepper hummus with green peppers and nut crackers!


My last dinner was a real sampler tonight! I was hungry for everything that I saw!!

I roasted brussel sprouts for the first time!
I coated them in olive oil, tossed them with some sea salt and added chickpea's!
I baked them at 400 degrees for 30 min, turning them every 5-7 min!



Then, I heating the rest of the quinoa from breakfast, coated it with Bragg's Liquid Amino Acids and topped it with sautéed mushrooms.

Last item was a turkey burger with melted cheese on top!

Last official food bloggin' dinner!

I treated myself to dessert again, despite last nights half cupcake! I had a Diana's banana baby!

Now that I officially know how to melt chocolate, I can easily make these at my house and save on buying them! I don't feel like I am over indulging either because of the banana! Win-win!

Tomorrow is my first day back to work and I am ready to continue taking my good eating habits with me. I am grateful for my week of food blogging for getting me on track!
