For the next 4 Fridays (May) I am going to be posting a recipe using POM Wonderful, Pomegranate Juice! They thoughtfully sent me some POM to work into some new recipes or even some of their own, there are a bunch on their site here.
I am excited because I created this myself! I wanted to have curry and sweet potato, but wanted to try out the POM too! I decided to make a "sauce from the POM, sauteed onions and curry powder, it was awesome:
I started by drizzling the sweet potato in 1T. EVOO (for shizzle!) and 3 pinches of sea salt! I roasted them at about 400 degrees for 20 min or so. with about 5 min left, I tossed a little chopped garlic on top!
With the other Table spoon of EVOO, I sauteed the onions till slightly golden & added 1/4 cup of the POM Wonderful Pomegranate Juice. The burner is about on medium and can be turned down a pinch from there when you pour the POM in. (from like 5-4!)
I sprinkled in 1/4 teaspoon of curry powder and then slowly added in the remaining 1/4 Cup of POM juice as it simmered.
I set it on low and then added 1/2 teaspoon flour just to help it thicken. Of course as it cools, it thickens also, you could probably use 1/4 teaspoon flour for a thinner sauce to drizzle or NO flour for a very saucy, sauce! Mine ended up being a nice thick "BBQ" curry sauce and it was SO yummy!!
I put the roasted sweet potatoes and POM BBQ curry with onions on top of a bed of spinach and enjoyed with some chips and salsa!
