Recipe: Squash Crock-pot casserole

HAPPY Friday!! I am showing you the first food pics with my new camera! 


DelCabo Sunburst squash! I am SO happy with the quality of my new camera. 
I am not much for reading directions or operating manuals. I am more of a take it out of the box, turn it on and GO. That goes for everything. Oy vey. I NEED to take the time to learn how to use gadgets I buy so I can use them fully to reach my goals! 


I made a Squash Casserole that I was SO excited to try it, the recipe looked amazing. In hindsight, I didn't notice the lack of COLOR or SPICE!
The ingredients: 

2 lbs of yellow squash or zucchini (about 6 cups) 
1/2 chopped large onion
1/2 cup shredded carrot
1 can condensed cream of celery or chicken soup
1 Cup sour Cream
1/4 Cup flour
6-8 ounces seasoned stuffing crumbs (I used co-op croutons)

Suggested ADDITIONS to recipe: 
Carrots:  use 1.5-2 Cups of sliced carrots
2 Chicken breasts cubed
1 Cup cheddar Cheese
1/4 T. Sage spice



I found this Amish Sour Cream (light) at my local co-op and my word, I could have drank a glass of the stuff (promptly felt bad and went for a run) but yes. It was that rich and good. 




Combine Squash, onion, chicken, carrot, HALF of the cheese and soup. Mix sour cream, sage and flour separately, then stir into veggies. 



Place half of the croutons/crumbs on the bottom of the crock pot and add veggie mixture. Top with the remaining croutons/crumbs and the last 1/2 cup of cheese. 



Cover and cook on LOW for 6-8 hours.

Modifications: The onion and carrot disappear a little in this recipe, so I added more of both(shown in recipe).

 I recommend NOT shredding the carrots, but chopping them and using 1.5-2 cups. I also added Red Pepper on top for a little more flavor. It's a great recipe, but was a little bland, so I threw in the chicken, cheese, sage and red pepper on top to fix it up a little bit!

I worked almost all afternoon in the office at my apartment building, organizing and filing! Although I have been the resident manager since August, It has taken me this long to clean up and reorganize to where I can feel comfortable!  Tonight I am off to a fundraiser/shopping event and will post pictures later!
