Recipe: Chicken Pumpkin Curry

I succeeded this week at making and planning meals!!

Pumpkin Chicken Curry wraps
Pumpkin Chicken Curry with raisins and Quinoa
Dill shrimp salad wraps

Fish taco's with cabbage and corn salsa
Flat bread Pizza: eggplant, fresh mozzarella and glazed onions

I was very proud of myself and life WAS easier and I felt better too for eating more controlled. Good things all around. SO I am sharing my Pumpkin Curry recipe which Face book fans cried out for!  Follow me! 

Pumpkin Chicken Curry 
2 chicken breasts cooked
1 heaping Tbsp of Chobani plain greek yogurt
1.5 heaping table spoons of organic pumpkin
1/2 Tbsp of curry powder
1/4 tsp Garam Masala
Dash of ginger
Dash of Cinnamon

The Organic Pumpkin makes such a huge taste difference! 
To start, cut the 2 chicken breasts into bite size pieces and brown them! 
Then add in the heaping Tablespoon of yogurt and simmer. 

THEN add in the heaping Table spoon and a half of 
pumpkin and simmer till well blended. 

Spice it up!! 
Add in 1/2 Tbsp of curry powder
1/4 tsp Garam Masala
Dash of ginger (or to taste)
Dash of Cinnamon (or to taste) 

Serve in a Flat out wrap or pocket pita with lettuce or spinach! 
OR serve with fluffed Quinoa and raisins! 

It's easy AND tasty and you can add the chicken curry to any sandwich, wrap, rice or grain dish so it's versatile too which is ideal for meals on the GO!
