Recipe: Banana free Green Monster & updates

Happy Tuesday, this is going to be one of my busiest days this week! I LOVE busy days!! 

Run Update
Last week I had some kind of stomach flu...ewww! And I was knocked on my butt pretty much. My running was quite out the window and I even missed work, but there is always a silver lining! 

I ran over the weekend, but nothing like I am supposed to be doing for my training (on which I am behind. Phooy!) But life happens and you just pick up where you left off. This week I am back at it strong, this morning I went out for a run and felt great.  

Banana Free Green Monster
So my sweetheart isn't big on banana's, but I didn't think he would notice in an amazing Green Monster! He did, right away. SO I whipped up a green monster free of banana and a little on the tropical side. 

2 Cups Spinach
1 Cup Frozen Pineapple
2 Table spoon Chia seeds and 
1.5 Cups Coconut milk 

The Chia really thickens the smoothies up, so there is no need for more fruit! 
All kinds of additions can be made too: supplements, protein powder, seeds etc...
It's a fresh Green Monster, tropical, bright and tasty--perfect as you sit and day dream about summer coming... 

Weekend Updates: 

The weekend was a great one! I went out with co-workers to say goodbye to the Fitness Director, the one who hired me as a trainer! It was a wonderful time, but he will be greatly missed. This is me and my Group X supervisor and we were hamming it up at the BBQ Joint! 

Volunteering at the Lucky 7k in Minneapolis Saturday morning was a BLAST! I landed with a number of other volunteers all from Single Volunteers of the Twin Cities. It isn't a dating organization, just single people having fun and did we ever!
