Egg Muffins, Back & Bi workout & 30 days!

HAPPY FRIDAY! 
Right now, it's 68 degrees, I plan on doing some painting outdoors, a run and maybe a pedi if I have time. It's also date night with my husband, dinner and a movie outside at a friends house, so FUN
I LOVE breakfast food and luckily you can do breakfast up pretty healthy!  On Facebook, I follow Scott Dorn Fitness. If you don't follow, you should, he has some great tips on clean eating and GOOD food! I tried his Egg Muffins below: 



They are easy because you can make as many or as few as you want or have ingredients for! They are the perfect snack size or serving size for one person, they are easy, fast and great for kids--all around WIN! 

Spray a pan lightly with olive oil and take sliced turkey ( you COULD use ham or bacon too, but turkey is leaner for you guys watching the waistline!)lay one piece down in each muffin round.

 Then add two big leaves of spinach and some "filler". I dropped in a few pieces chopped onion and mushroom. 

Crack a full egg on top and top with just a PINCH of cheese. You could also dollop a bit (1/2 T.) of cottage cheese under the egg. 

Place in a preheated oven for 15-20 min until fully cooked. Slide out, freeze, fridge, enjoy!! 

At 20 min the egg is fully cooked, yolk and all, I am going to shorten my cook time next round to 15 and see if I can't get the egg to be soft boiled consistency! 


Enjoy on the side of fruit, protein pancakes or alone in a jiffy!

BACK & Bi WORKOUT
MACK and I did a great back and bicep workout together at the gym the other day! I love how we both love working out and can do it together! It's great!! 

Warmup
Latpull down (back) three sets 100#
hammer curls (biceps)three sets 20#
single arm row (back) three sets 45#
21's (biceps) one set 40#
Bent over row (back) three sets 50#
*Bicep curl partner resisted  

*These are killer. MACK helped me by pulling down just slightly on a light (non-weighted) bar as I pulled UP on it. No set number of reps, just a time of 30 plus seconds in a mostly isometric motion, but WOW. Give that a shot for some great gains in strength!! Did you know, research shows that 94 percent of couples stick with their workouts when they work out together? Thanks Fitness Mag and Jari Love, CPT! 

We've made it 30 days! On Monday, it is our ONE MONTH wedding anniversary!! What a sweet month it's been! Married life has been everything I thought it would be and THEN some, I just thought our place would be cleaner by now!

Recipe: Stuffed peppers!

Ok, TWO weeks after moving into MACK's apartment, life is resembling something akin to normal.  Organized? No way... Cooking again? YES.
Finally, really cooking real meals again. I was inspired by a co-worker to bust out stuffed sweet peppers!! I nearly FORGOT about these amazing and quick little gems!! 

STUFFED PEPPERS WITH A BANG:

Serving size: 2 large peppers stuffed 
Ingredients 
2 Cups cooked Quinoa 
1/2 Cup Reduced fat cottage cheese
1/2 Can black beans ( or kidney beans!) 
1/2 can Rotel, chilies and tomatoes OR 
Chop your own, 1/2 cup total tomatoes and hot peppers of your choice
1/4 cup ripped up cilantro
1/2 Cup finely chopped zucchini
1/4 tsp Chili powder 
Black pepper to taste



Preheat oven to 400, place about 1/2 an inch of water in a glass baking pan. 
Stuff peppers full and place IN baking dish. Bake 40 min and remove from oven, drain water or remove from baking dish and ENJOY !

HINT: LOVE the taste of the quinoa mix? 
Make a double batch and freeze, add on the side of chicken breasts, mix in with ground turkey mashed sweet potato and use as a base for healthy shepherds pie! ANYTHING! Always make more and freeze so that you simply have to thaw and GO with a healthy meal! 

Speaking of healthy on-the-go, I got the best wedding present from the gym manager! I was gifted a 6 Pack Fitness cooler!! It has space for FIVE tupperware containers, 4 drink containers/protein shakers or fruit, bars and a weeks worth of supplement slots at the top of the pack. No plastic bags, no spills, all cooled in one place, easy to carry...It's the EPIC fitness lovers cooler!! 




Healthy and FAST is the name of the game, so I will be using this for family outings too, this past weekend was the FIRST full weekend as step-mom or as I was dubbed by Mini-MACK, GIRL MACK. I LOVED it, we are having a ton of fun as a little MACK family and I will be using the 6 Pack fitness bag for family food and snacks for sure!

Coming this week: Super setting shoulders, back and BI's with MACK!! Be Inspired you guys, there is NO finish line, just infinite chances to start over, make better choices and recreate the path!!

Back as Mack

I am back, as Mrs. Mack!! 

It's been a whirlwind few weeks! I anticipated being able to blog right when I got home from our honeymoon, but the last week was spent moving in with my new husband!!
I have a TON of stuff, we have been purging and unpacking and enjoying the first few weeks of married life!! 

The wedding was beautiful, we had an amazing day filled with love of family and friends and we LOVED getting married!! Best part? Saying our vows and looking into each others eyes knowing we will be together forever. 



AND we went to Las Vegas for a week for a honeymoon!! It was a total blast! We ate, went to shows and walked around sightseeing!! We lounged by the pool and LOVED the heat!
The best part? How can we choose? Spending a relaxing week with your new husband in a desert paradise is amazing! Knowing we are embarking on an amazing journey together and this is the start is priceless!



We also took one day and went hiking in Zion National Park in Utah, it was gorgeous! We wish we could have stayed longer, but it was the perfect day trip to the park and back. 
We hiked all over the park and into the Narrows as it's called, through a canyon river bed (not dry folks!) And felt like total warriors for doing it! 




Gods creation is just mind blowing, he is so detailed and loves variety, is it any wonder he made us all the way he did? 

Look up into the heavens. Who created all the stars? He brings them out like an army, one after another, calling each by its name. Because of his great power and incomparable strength, not a single one is missing.Isaiah 40:26

FITNESS/Figure UPDATES
No working out for this girl in Vegas, the gym at the hotel was extra cost to us and we were budgeted tight, so I passed on any lifting in the fitness center. Walking and enjoying my new husband was the focus --I am OK with those 10 days of rest!! I was back at the lifting within 3 days of being home and I count that as a success! I plan on getting married only once and it was a much needed break with my love. Current goals include: water intake (get it!), upping fiber in my diet (cabbage, more veggies!), muscle gain and getting back to a FULL 7 meals a day, not just 3.
