Recipe: Clean Apple Crumble

CLEAN APPLE CRUMBLE

2lbs sliced apples
2tbsp lemon juice
2/3cup rolled oats 
2/3cup wheat flour
1/4cup chopped walnuts
 1/4cup brown sugar 
1tbsp cinnamon 
5tbsp coconut oil 

Preheat the oven to 400 degrees
simmer the apples in lemon juice for 5 min and lay in the bottom of your 9 x 9 baking pan


Str in brown sugar with apples. 
Combine oats, flour, walnuts and cinnamon in a bowl and stir together. 
Stir in coconut oil until crumble effect is created! 



Top the apples and bake at 400 for 25 minutes! Serve and enjoy! 

Recap blog: What I do when I'm MIA


Happy Friday! I have had SUCH an amazing week, God has really shown me that his timing is everything and when he says wait, just be still and wait. And when he says GO, you better have your bags packed!! 

I finally have a new computer, I had been blogging really sporadically from my MACKS laptop, but we took my sick imac to the shop and came home with a new one for me! It had been almost 2 months since the computer just failed out completely and although it went fast, I sure missed sitting down at my desk and working/blogging. I have a laptop and monitor combo,I am mobile!! 


Working out and Orchard: 
I have been doing a lot of drop sets which i love for building strength, it keeps your muscles under tension which is essential for growth. Always getting that workout in, even if it's only 25 min of a lift, better than none at all! 


Speaking of, my gym went under a remodel and added 2000 square feet!! It's a dream gym now, I love the space and how bright it is! However, I was used to be able to kind of hid in the older, narrow weight room and take pump pics in the mirror, no more, there is no hiding! 


We went to an apple orchard and corn maze!! Simply put, it was just a nice day to spend in the fall weather and having a blast with friends from church. 






The orchard was very fun, we went on a hay ride, got to pet animals and best of all, we actually picked apples!! For some reason, I thought that we would have to climb ladders to reach the apples, so I was a little sad that the trees were so low, who knew!! 


Waiting for what you want: 
What have you had to wait for? I don't mean like me waiting for a new computer, I mean really waiting on God for a change, an answer to prayer, for that hearts desire you have cried over and dreamt of. That. God will speak to us WHERE we are. Meaning if you are waiting for that big job break through, we can talk to God and hear him talk to us while we wash the floor, write our resume, while we fold the socks. I am waiting on things. In my holding pattern I work, I cook, clean, I do all the life stuff. He meets me there, he talks to me, tells me little things to be encourage me, to move me forward. He covers me with peace.

The unique thing about waiting on God, the true living God, is that he offers us peace. He says to us, "Be Still and know that I am God." Psalm 46:10. In this world, in this life, we are never still, we are always running, busy, doing, checking off, getting done. Yet the God who weighed out the dust and waters in His hands wants us to be STILL so we can know His heart. 

Here in our waiting, in our patient stillness with our desires on our hearts, we can know Him and his transforming peace. Here our hearts desires become Him alone. So next time your waiting for God to open a door, just be still and rest in His peace in the hallway.

Recipe: Baked Eggs take two

I love breakfast food, all of my readers know that!
So, I decided to try a baked tomato and egg dish from
Hungry,Healthy, Happy.  It was SIMPLE, pretty quick, healthy and a nice protein focused breakfast!  You can get VERY creative with it as well and still keep it nice and clean!

This was trial #1....

Ingredients: 2 tomatoes
2 eggs
Options:
Cottage cheese, spinach, pico de gallo, shredded cheese, green onion, peppers, cooked quinoa, fresh herbs and spices!

Basically ANYTHING you love with eggs, that you want to add in! The concept is like a stuffed pepper!




Slice the tomatoes, and scoop out the center, just enough room for the egg.
Crack your eggs in the tomato bowl, add your fixings and bake at 425 for 30 min!

Round 2 turned out!

Despite a mini fiasco where my glass baking dish broken in the oven causing a bit of a pre-church rukus (see fiasco including spilt coffee and all!) round one was thwarted and round two turned out great!! 

I see prepping these and baking a few ahead of time, being a nice treat and refreshing change when breakfast gets a little ho-hum!

I love the idea of using the tomato as a bowl, especially in the fall when heirlooms are ripe, it's such a simple and yet decedent treat!! Enjoy and thank you to Hungry Healthy Happy for the great recipes and a great site as resource!

Keeping active with kids and the Hero!

Happy Monday everyone!!
 
I had a great weekend with Mack and Mini Mack, we spent time outside, on a RUN and a walk which is something that 5 year old Mini Mack doesn't really dig, as he is little and doesn't really want to go around the lake for 5 miles. BUT, give him some crayons and THIS and he loved it!
 
 
We never want to be the parents who don't exercise because our kids are too little. Kids are TOTALLY transportable and this little thrift store jogger was an answer to prayer! We all went for a run and a nice walk and of course, ate a nice healthy lunch after!! (GO EGG SAMMIES with avocado!) I took the weekend off lifting because my past week was really intense, it felt good to get back to cardio a little more! That is this weeks goal, add in short cardio and keep lifting heavy!
 
 
 
The HERO
Who do you admire? Someone at the gym who is super strong? A friend who has ROCKED out their fitness goals?
Personally, I have alot of people that I look up to and think are amazing. Since becoming a mom to a 5 year old, my WORLD is full of super hero's...I am learning the difference between all the faces of Ironman and Spider man, I am watching movies of good vs. evil, mild manner reporters who save kids and reporters from peril in their spare time. I myself have been dubbed wonder Woman by Mack and Mini Mack. I am cool with that, I dig her jewelry.

There is a reason we are drawn to those fighting the good fight, the good guy making the hard choices, the HERO we can look up to!!

The soul was made to stand in awe of a Person-the only person worthy of awe. All heroes are shadows of Christ. We love to admire their excellence. How much more will we be satisfied by the one Person who conceived all excellence and embodies all skill, all talent, all strength and brilliance and savvy and goodness.  God loves us by liberating us from the bondage of self so that we can enjoy knowing and admiring him forever. What does it take for you to start over ?

What does it take for you to start over when you have gotten off track? I posed that question to my face book followers and got a nice range of questions. The first thing that needs to happen is a SHOCK to the system. 

Do you feel stuck in your JOB? 
Do you need to step on the scale
Hey, put on those jeans
Did you see a bad report from the Dr. 
Admit you get out of breath when you shouldn't be.
Face the truth that you want a MORE abundant life!

Admit to yourself that you fell short of what you once wanted and what you were aiming for...health journey, career, faith walk etc...   



Shock the system. Face your facts. Tell yourself YOUR truth. Do it with love and start the process. 

See it as a step forward. Starting again or starting over does NOT have to be seen as a failure. You can see it as a step forward, a step UP! A failure would not be starting over at all! 

Get a partner. Find someone to tackle your goal with you, find a friend who will be strict to hold you accountable to what you want, email them your progress, be open to constructive feedback, help them help you! 

Take small steps that stick. Don't try and change your life in ONE day, take a few small steps to start. Pick a small step today and DO it. Build on that, literally, small single steps will cause you to go far. Drink one more bottle of water, make that phone call, stand up for what you need today. 


Think of past successes, see yourself repeating those. Successful athletes never focus on their failures, they adjust what they need to and see themselves over and over repeating their successes. When you do this then "starting over" happens less and less as you are just moving from learning experiences to successes.  

Get HELP! Enlist the help of a trainer,a specialist, an  online course, something you can go to for help in the area you are working on. You won't feel alone then and you will be able to tap into support and advice. 

Do what you enjoy. If you enjoy the change you make, then you will be less likely to go back on your new path! A new diet plan? Add in a little of your old faves, a little seasoning etc. I became a trainer because I loved working out, in turn I love helping people realize their dreams. 


Still there are paths that involve things that are "easy to do" and "easy not to do". Jeff Olson in The Slight Edge shows that those things uncomfortable at first: a scary step forward, a leap of faith, a change in lifestyle, stepping out of your comfort zone, become easy to do after a while, even if they are not at first. DO those things!!! STEP OUT, start over, shock your system and get started on the lifestyle that you want!

Camping recap and a new goal?


Hey everyone, Happy Tuesday, it's almost gone!
I am really happy to announce, that I was the feature in Muscle Sport Magazine as "Today's Ammatures, Tomorrows Pros"! It's such an honor!! I am aiming for my procard, so it's a great honor!


Our little MACK family went CAMPING! We love to, this summer, because of the wedding we only went twice, this time was to an AMAZING camp ground near the Great Lake of Superior, in Duluth, Minnesota! It is gorgeous up there!!

I was determined to do better than our last camping trip and make sure my family has clean eats AND a nice variety with a little fun! So I spent the first three days of the week planning away!


There were pancakes (a protein shaker for batter works wonders!) Tuna melts using a cast iron sandwich maker, oranges, celery and carrots for snacks, turkey burgers, omelets (in a bag, on the fire), homemade pizza pockets and a clean eating fruit pie with apples and peanut butter and a light cottage cheese salad which will be better next time I make it!!

Clean eating with kids has been a whole new ball game for me, I am enjoying the challenge though!

So, I am contemplating a goal of a photo shoot with a little more weight and BF% than my last as my next goal, I won't be competing till the spring anyway and that magazine spread is a FINE kick in the butt to get moving and STAY moving forward.  I will follow up on what is next when it's final!!

Food burn-out & banishing EXCUSES!!


Confession time:
#1 I haven't been blogging because I haven't felt like Ihave been on my game. Meaning, I have been about 70% on plan with my eating habits. Because of that I haven't felt very good about where I am and experienced a wee bit of lack of inspiration. Why off clean eating plan that much? Food burn out, excuses and time (see excuses).
 
Food burn out!! I never thought I would be sick of certain foods, certain foods I love!! Certain veggies, fish and chicken--some amaazing tasting staples of a clean diet have me saying "MEH.." Burned out. Sorry buddy.   
 
 
Confession #2:
Lack of inspiration in my own diet leaves me little to say on the blog!! Sad, I know. I have been doing some fun experimenting in the kitchen and gaining some new momentum with some different clean eats, but over all, if I am rocking my eating, I feel inspiring. If not, what do I say? BUT that is where we find inspiration in those confessing struggles too! It's not that I feel my struggle is anything more than over coming BOREDOM in the kitchen, but it shows a HUMAN side to bloggers! Help, I hate my kitchen, help, I need inspiration like the rest of you do, like all of us do! 
 
 
I have used time (jobs, a little social life, projects) as an excuse for NOT spicing up the eating, spending some time in the kitchen doing something new and for not blogging etc.. I hear excuses everyday as a trainer, they shouldn't be my own!!
Here are some ways to stay ON COURSE for all of us and BANISH excuses:

1)Make it a family affair! Make a family nite of it, make a game of it, put on a few good tunes and rock out! Put on a podcast, sermon or audio book and enjoy!
 
2) PIN IT! Use pinterest to keep track of recipies, new foods, get new ideas for meals, workouts and time managment. That is one of t he big reasons that I use is, I don't have TIME, when I do, I just misspend the time I have. PIN IT!
 
3)Schedule it in! Just like a Dr. Appointment, just like work, just like anything else that has a set start time, make that food prep, shopping, workout etc a scheduling priority!
 
4) Set a timer! Set a timer for that important task! Be it a snack you need, a trip to the store, a work out--WHAT EVER! Put it on your calendar with a timer and stick to it!

 
 
I have found myself over the last few months since my wedding, making up a little bit of lost ground, hitting the reset button! I have been continuing to workout and even see some awesome gains in strength. Still in some areas, am making up a little lost ground. But it's never really lost if little by little its under my feet step by step and you too!! I think sometimes we feel like we have "arrived" and can take it easy a little...well sure, those days are called REST DAYS!

I never want to lose ground that I have conquored! I want to ALWAYS press forward and then forward more!! I want to be better, stronger, faster, kinder and closer to God tomorrow than I was today! So my leg days are getting harder, my back days more intense and my presses and bicep curls are never going back to what they were. Always pressing forward, always keeping my eyes on God and eyes on the prize!

Not that I have already obtained this or am already perfect, but I press on to make it my own, because Christ Jesus has made me his own. Brothers, I do not consider that I have made it my own. But one thing I do: forgetting what lies behind and straining forward to what lies ahead, I press on toward the goal for the prize of the upward call of God in Christ Jesus.
